Classic Crispy Cod Sandwich with yesyum Smoked Kimchi Mayo

Ingredients

  • 4 cod fillets (about 150 g each, skinless)

  • 1 cup all-purpose flour

  • 1 cup cold beer (pale ale or lager works well)

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/4 cup neutral oil (for frying, like vegetable or canola)

  • 4 brioche buns (or your favorite sandwich rolls)

  • 1 cup lettuce, shredded

  • 1/2 cup red cabbage, thinly sliced

  • 1 large tomato, sliced

Instructions

Step 1.

Prep Your Cod

Pat the cod fillets dry with paper towels. Season both sides with a sprinkle of salt and pepper.

In a large bowl, whisk together the all-purpose flour, salt and pepper, cold beer, stirring until a smooth, slightly thick batter forms.

Dredge each cod fillet in the flour (shake off the excess), then coat in the batter. Make sure they’re fully covered for max crispiness!

Step 2.

Fry to Golden Glory

Heat the oil in a large skillet over medium heat. To test if it’s ready, drop in a breadcrumb—it should sizzle!

Gently place the breaded cod in the pan and cook for 3–4 minutes per side, or until golden brown and cooked through (internal temp should hit 60°C/140°F).

Transfer to a plate lined with paper towels to drain any excess oil.

Step 3.

Build Your Sandwich

Toast the brioche buns lightly—this is non-negotiable for that extra crunch!

Spread a generous layer of YesYum Smoked Kimchi Mayo on both the top and bottom buns.

Layer on the shredded lettuce, red cabbage, and tomato slices.
